The Zische Missarka Blue is a high-quality, hard-bonded sharpening stone made of premium aluminium oxide (corundum), specifically developed for the sharpening and fine sharpening of knives. With its two grits, a medium side (FEPA 500) and a superfine side (FEPA 1200), it is ideally suited for precisely sharpening high-quality kitchen knives and other cutting tools to a very high level of sharpness.
With dimensions of 200 × 60 × 25 mm, the Missarka Blue from Zische is based on classic waterstones, offering ample surface area for safe, controlled blade guidance. Due to its harder bond compared to many Japanese waterstones, it wears slower, hollows out less, and remains flatter longer – while providing a very pleasant grinding effect.
The blue side (FEPA 500) is used for pre-grinding and for correcting minor signs of wear, as well as for establishing a clean, even cutting edge. The white, superfine side (FEPA 1200) is intended for fine grinding and fine sharpening, and due to its hard bond, it produces a particularly fine grind pattern that is significantly superior to a “normal” 1200-grit waterstone.
Use:
The Missarka Blue is designed as a waterstone and should ideally be used with water:
- Soak the stone in water for a few minutes before sharpening until no more air bubbles rise.
- Ensure the surface remains slightly wet with water during grinding.
- Place the stone on a non-slip surface or a damp cloth.
For combination sharpening stones, first work with the darker, coarser side (FEPA 500) to prepare the cutting edge and create a clean bevel. Subsequently, perform fine grinding and sharpening on the lighter, finer side (FEPA 1200) for a particularly sharp cutting edge.
For double-bevel kitchen knives, guide the blade over the stone at a shallow angle (approx. 15-25° depending on the knife) with light pressure. It is important to maintain a constant grinding angle along the entire blade length and to work both sides evenly. As sharpness increases, pressure should be reduced to achieve a particularly fine cutting edge.
After sharpening, clean the knife and stone by hand with warm water (and possibly some soap). If the stone becomes uneven or heavily soiled over time, the surface can be made flat and clean again with a simple flattening stone.
